6 racks of loin backs

I did 6 racks of loin back at one time this past weekend. 5 rolled on the lower rack and 1 in a rib rack with all the rest of the trimmings on the top. Used a brinkman pan filled half way with sand. Started with half the charcoal ring filled and dumped a full chimney of lit coals on top. Target time for this cook was six hours. Everything went pretty much as expect except the temp stayed around 200 @ the dome for most of the cook. The vents were wide open for the first 5 hours. Air temps were in the 60's with little wind.
Is it unusual for the temps to take this long to come up to 250 with this much meat?

By the way the ribs turned out great but next time I'll put the rolled ribs on the top.

Sounds like your airflow was restricted. Putting 5 racks on the bottom is probably too much. I have had similar problems when loading the WSM. I was able to get the temps up by adding more lit briqs, but I struggled all day with it....NOT how the WSM should perform.
