20# Brisket


 
Something of note. I bought this Govee wireless probe set that many were raving about on YouTube's many BBQ channels. Here to tell ya it ain't the second coming! Just probed the meat and the grill and they're reading quite higher than accurate. One thing about Big Z I've discovered is the temp readout compared to actual ambient probes is usually quite accurate. Usually no more than 10 deg either way. Right now, I've pushed my grill temp to 250 and another (not Govee) probe is showing pretty close while Govee is reporting 275-280 :mad: No support from Govee either. Great looking and everything thermometer system but not ready for Prime Time
I may have to resort to the Z Grills own wired probes :(
 
OK Progress to this point. Puzzled too. As never have had this happen to me. My point (much thicker portion) is cooking WAY faster than the flat. What gives here? It went on about 2130 last night at 190, took it to 220 earlier this AM about 0800 and then about 10 bumped to 250. My stupid Govee is showing me ambients of 266 and 302. Hate the device. I may switch over to my TempSpike units. No WIFI but at least accurate. Well now looking at my actual wired probes plugged into the controller flat and point are 189 and 190 respectively. So scratch my other confusion. I do know the Z Grill probes are reliable and accurate as verified by my 3 instant read ThermoPro units which consistently are within .1 deg of my ThermoWorks Smoke. So, I have no doubt on my ThermoPro products.
Anyway it's lookin' and smellin' OUTSTANDING!

I’ve never experienced a point running hotter faster than a flat when temp monitoring. Usually the flat runs away during the first few hours and then meets the point into the stall.

From your pic your brisket looks normal sized.

I just use the wires probes with my Signals. It’s been flawless since buying it.

I can only guess your probes went wonky for a bit.

I really hate using wired probes and honestly did not and do not like the TermoWorks Smoke. I just expected better out of the Govee product. I'm convinced all the YouTube influencers singing it's praises, were paid advertisers not neutral reviewers.
In any case I have pushed through the stall and I've reached probe tender and target temps. Gonna be pullin' that beauty off and into the cooler here soon.
 
My Therm-Pro maverick was cheap as chips and has performed flawlessly. Simple, replacement probes are not astronomical but, I always keep a couple spares…just in case.
I have had one probe go bad but, in six years, I’m really pretty well pleased.
I don’t have many $30 tools that perform as well.
I wish I’d known you were doing a big brisket, I’d have brought a couple bottles of vino!😉
 
Amazing how much it shrunk. When I placed it on the grill last night it took over 2/3 of the top rack from left to right. When I pulled it it was nearly 5 inches shorter and fit in medium sized drip pan. But it probed "like buttah"

Cooked weight, after trimming and cooking is around 60-70% of the raw original weight. All depends on the trimming.

Yep. Several times I did a 18# on my 18.5" WSM.
You have to wedge it between the handles and bow it up in the middle with a empty soup can or rib rack.
After a few hours it shrinks and then can lay flat.
 
OK as promised photos (though most of the evidence was devoured) :D It was absolutely incredible. Everyone was raving over it and they all left looking like medieval stuffed King Henries :D My nephew went in for 3rds and 4ths, my son in law couldn't seem to stuff himself fast enough. FWIW I I used a new pellet I'd never seen before but just started buying at Menards Bear Mountain Chop House blend. I'm getting it there for only like $6 per 20# bag. And I love the 20# format. So much easier to handle and one bag nearly fills Big Z's hopper https://www.homedepot.com/p/20-lbs-Chophouse-Blend-BBQ-Wood-Pellets-FK32/336108543 Anyway as promised some photos of the beast. Please don't make fin of my messy counter. It's been a hectic day and night. We pulled all this off while still watching the 2 little girls. And I set up my large folding banquet table in the garage and utilized my hanging electric furnace keeping the garage at a nice toasty 73 deg. We sat, ate, drank and celebrated. My nephew came in and said where did that Cadillac jacket come from. When I left the automotive trades in 73 as a dealer mechanic I had the jacket on when I was loading up my tools. I explained it was my jacket from late 60s early 70s. He was so stoked I gave it to him. So cool! anyway it was a great day of celebrating my b/day, my little 3yo granddaughter's b/day and wife and I 40th anniversary (even if I did end up doing all the cooking. Had my sister and brother in law, my 2 kids and mates, and my grand kids. Good food, good scotch. Good times
