WSM SD11 Baltimore Pit Beef


 
(Meat has rested and I'm slicing by hand using a sharp knife. Wife is watching intently...)

WIFE: You could really use an electric meat slicer to slice this pit beef, couldn't you.

ME: Yes, I could.

(Long pause...I continue slicing...)

ME: Are you giving me permission to buy an electric meat slicer?

(Long pause...I continue slicing...)

WIFE: You've got to find some place in the kitchen to store it first.

(Another long pause...I continue slicing...)

I think I know what I'm asking Santa for Christmas this year!
 
Another flavour I have not tasted: Baltimore Pit Beef.
Looks Wonderful Mr Allingham! Love the raw onions... would it kill the taste to add a dill slice?

After Santa delivers that meat slicer, ditch the toaster. Replace a useless tool with a Good Tool. ;)

From what little I read, the authentic version is a horseradish sauce with white onion. But once you get outside Baltimore, I'm sure anything goes. :)

As for the toaster...you'll have to pry that from my cold, dead hands. I love toast.
