No. 5.2 Sauce

No. 5.2 Sauce

1 T olive oil
1 slice bacon
1/2 cup rough chopped onion
2 cloves garlic
2 cups ketchup
1 cup cider vinegar
2/3 cup brown sugar
2 T worchestershire sauce
2 T Rub (Christmas Rub)
1 dried cascabel pepper
1/3 cup dried mushrooms
1/4 cup dried fruit (cherries or cranberries)
1/2 lemon (juice)

Brown the bacon in the olive oil. Add onion to saute then 2 minutes later add the smashed garlic. Once the onion and garlic have surrendered their flavor, add all the ingredients except the lemon. Simmer about 30 minutes then add the lemon juice.

If you prefer a chunky style sauce, you may blend or boat paddle to desired consistency.

I prefer a smooth syle (that does not clog my dispenser) so I will strain out the solids, then bottle.

The solids are great on BBQ sandwitch or burrito.

The layers of flavor added by the oinion, garlic, bacon, mushrooms, cascabel pepper and lemon do kick it up a notch. If you like No. 5, I suggest you give this one a try.
 
I don't know how this post got overlooked but I'm going to bump it to the top. This looks VERY good, and I have added it to my ever growing list of must do's. Thanks again Steve, cant wait to try it.
