haven't made a fattie in a while, so i did.

1 pound Italian sausage, 1 pound ground sirloin

store bought bacon

sautéed green onions and minced garlic pasted on meat

sharp cheddar cheese ala Wisconsin

topped with fried store bought bacon

seasoned the bacon weave

rolled the pork/beef fattie patty into a log

dropped the fattie on the weave

wrapped the bacon around the fattie log


tossed it on the Weber Summit charcoal cooker with hickory wood added for smoke.

What's with the store bought bacon? :p
well, I tend to slice my bacon much thicker than the high quality low life bacon available at grocers nation-wide... however, some of that low-life bacon is pretty darned good, i.e., Farmland, ….ok, Farmland.

and that's what a used.

anyway, thicker bacon doesn't conform to the curves required for this application.
