Another Ribs and Sausage Cook

I cooked a rack of St. Louis cut spares and some sausage this past weekend.


I pulled the membrane and trimmed them up some.


I used mustard as a slather and then a light coat of Kosmos SPG and some Swine Grind


Seasoned.


My wife found this sausage at our supermarket. It's out Groom, TX, a small town in the Texas Panhandle.


Ran the WSM at 240 with KBB and Pecan chunks.


Sliced up sausage. This stuff has a very fine grind. It was very tasty.


Sliced ribs.


Plated with some Mac and Cheese.
 
Now that's what I call comfort food, nice cook Dustin. That reminds me I have six racks of St. Louis Ribs in the freezer.
 
That looks really good, Dustin!! I walked by a BBQ joint in London yesterday, but decided that was kind of like ordering chicken at a steak house..... :) I would have gladly had your ribs and sausage delivered to me on a plate! I got hooked on that sausage combo at Cattleack.

Dustin, that is one awesome cook. Love the ribs and sausage, that made one yummy dinner from the plated picture.
 
Yum! Looks tasty! A while back we had some leftover rib meat and sausage that would put into mac and cheese, tasty!
