Yesterday I did a 2 bone (3.8 lb.) prime rib roast for 4 people.
1/3 ring lump charcoal in 18 inch WSM
4 leftover wood chunks and 2 new wood chunks, 1/2 maple, 1/2 oak
started with 1/3 chimney reg. Kingsford

used leftover rub from previous butt cook
ran at 345-350 for about 1.5 hours
vents: top open 100%, bottom open 1/3 each
pulled at 120-122*
rested 30 minutes
finish was mostly medium-rare with a little rare meat

It was fabulous
one guest, a serious cook, asked what marinade I used---answer none
just rub and smoke

1lb. per person was perfect

What would I change?
use two fewer chunks of wood

"just rub and smoke" Why don't you guy's ever give us recipes? Knowing how to cook something is one thing, but the wrong rub will make the whole meal a complete waste of time and money. Pictures of what you did will not help that. Sure, we can put any rub on a piece of meat, but I for one like to try different rubs and change things up now and then. So more recipes here and maybe less photos.
