Teres major steak from Porter Road Butcher. It's hard to believe this steak comes from the shoulder but eats like tenderloin. Salted, took it to 135°F, simple, juicy and delicious!

Super looking beef cook Chris!
Those cuts are called petite tenders around here, and not very easy to find.
 
Cooked perfectly Chris. I've never seen anything like that here, but then again I usually only hang out in the dog food section of the meat department .:p
 
And they’re out of it ! Better to have things be “out of stock” and fresh than laying about! That will also drive some “urgency” as we used to call it when I was selling vacuum cleaners!That really looks wonderful Chris!
