Wife and kids were away for the weekend so it was time to indulge.

Took the base of my WSM, fired up some charcoal, threw in a small chunk of mesquite, slapped the top grate right on top of the base and cooked that fat juicy rib steak to perfection.

Juciest, tastiest steak I've ever eaten.

Love the convenience of my gas bbq but nothing will ever beat coal for flavour.
 
last evening I reverse seared 1" thick pork chop.

I put about 15 lit coals in the Kettle with a small stick of pecan to cook the chops indirect.

But when they reached 125* internal, I did not have enough coals left to sear. I fired up a small chimney of coals and it was still not enough. I had to improvise.

So I threw a stick of pecan on the coals, about 12" long, 2X2 diameter, and let it burst into flame and seared the chops over a wood flame. They were delicious. Maybe the best I've done.

That's what I ran into earlier this week, will have to try your nearly instant sear trick.
