yes, we finally celebrated Smoke Day yesterday, July 20th...

The night before, the yard was trimmed and ready, and the smokers were set up ready to use.

a 14 pound brisket was trimmed to 10½lbs...
and an 18½ pound brisket was trimmed to 13 lbs... then both seasoned with salt & pepper.
Seven racks of Saint Louis spares were cleaned and trimmed early Saturday morning.

The WSM was fired up at 11:30 pm Friday night... brisket hit the smoker at midnight. (on schedule)

on Smoke Day, the WSCG was fired up at 9:30am with the ribs on at 10am (on schedule).
Tried to fit all 7 racks on this smoker, but it was too tight... the 26" kettle was converted to house two racks.

the smaller brisket hit 200º after 11 hours 15 minutes (11:15am)...

removed it from the WSM and wrapped in foil to wait...

the second brisket finished after 14 hours (2pm or so)... (sorry, no photo after it came off)

 
the ribs were done at 3pm (about 5 hours) and sliced.

slicing the brisket was next... decided to CHOP the beef... mix fat with lean.

timing was spot on.
including the rain. started right about time to eat....
but some folks were comfy outside staying dry...

the rain eventually ended and we got to socialize a bit in a drier atmostphere....

Great photos of the food and the people socializing! Glad that everyone had a good time even with the rain.
