Doing burgers so got the fries and tater tots on the E320 cooking. Got the burgers made and on the Genesis 2000 with American and Swiss cheese. Tope with homemade bacon, then finished with lettuces and tomato. Plated with fries and tarter tots for the girls. Have to keep them happy.

Next up is Baked Chili and Biscuits done in the 12” CIS. I cooked the ground meat first then added the rest. EVOO, chopped onion, garlic minced, kidney beans, cumin, paprika, chili powder, fire roasted tomatoes and tomato sauce. That simmer for 10-15 minutes. Biscuits cut in half and roll into a ball, combined butter, garlic, parsley and whisk together. Dunk each biscuit in this and placed on top of chili. Baked on the E320 for about 30 minutes until golden. Brought in and plated with more parsley and Mexican cheese.

Hope you had a great 4th weekend and thanks for looking.

Looks good. I love how you are using your grills to do most of your cooking. I try to do the same myself during the summer time. Even though I have AC, I still like to keep the heat out of the house.

Two very hearty cooks - I love it. The baked chili reminds me of my wife's mince and dough balls ("tatties, mince, and dough balls") dish. She might like this variation! Mince = ground meat.

Wow they look good. It's 05:30 and I'm hungry for lunch food after seeing those pictures :D

I would eat either of those for breakfast, lunch and dinner. I really like the biscuits and chili. That just looks outstanding!

Yum! Really like the chili biscuit meal! Good one for the dutch oven when camping!

Seems to be some interest in Barbs baked Chili and Biscuits.

So here it is.

Baked Chili and Biscuits

Ingredients

1 tbsp. extra-virgin olive oil
1 onion, chopped
2 cloves garlic, minced
1 lb. ground beef
1 c. kidney beans, drained
1 tbsp. cumin
1 tbsp. paprika
kosher salt
Freshly ground black pepper
1 (15-oz) can fire-roasted tomatoes
1 (8-oz) can tomato sauce
1 tube refrigerated biscuit dough
1/4 c. unsalted butter, melted
1/2 tsp. garlic powder
1 tsp. chopped parsley

Directions

Preheat oven to 375°.
In a medium ovenproof skillet over, heat olive oil over medium. Add onion and cook until tender, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute more. Add ground beef, breaking up the meat with a wooden spoon, and cook until no longer pink, about 5 minutes. Drain fat.
Return skillet to medium heat. Stir in kidney beans, cumin and paprika then season beef mixture with salt and pepper. Add fire-roasted tomatoes and tomato sauce. Simmer for 5-10 minutes, until the flavors have melded.
Meanwhile, make biscuit topping: Cut each biscuit round in half and roll each half into a ball. In a small bowl, combine butter, garlic powder and parsley and whisk until combined. Dunk each biscuit ball in the butter mixture then place on top of the chili in the skillet.
Bake chili and biscuits in skillet until the biscuits are golden and cooked through, about 30 minutes. (If the tops of the biscuits are browning too quickly, cover the pan with foil.) Let cool slightly, for about 10 minutes, before serving.
