Greetings from Central Ohio!
Im Chris, and 57 years old, retired.
Ive been grilling/BBQ for 40 years now. Spent some time as a pitmaster on an amateur team from '92-'97, and still will do some local contests, but mostly cook for myself/family.
I smoke brisket, ribs, pork butt, and chicken. I grill mostly beef, but only Prime or Waygu steaks. The only commercial ground beef I buy is Snake River Farms Waygu, other than that, I grind my own. Usually Tri Tip, Brisket, Short Rib, or a blend.
My current gear is a gen 1 WSM 18.5", Genesis Gold B gasser, and a 22 Performer w/gas assist. I also have a Smokey Joe for just a couple burgers or what not. I prefer charcoal, but in Ohio, its nice having the gasser in the winter.
