Steak, Potatoes and Grilled Peppers

Pulled a couple of prime rib eyes out of the freezer. Can't seem to go too long without a steak. Sides for this cook are baby gold potatoes and a grilled pepper/onion mixture.

Picked these up at Costco a while back. Not too big but they were an 1 1/2" thick. Just right.

Got the sides prepped. Basted the potatoes in oil and then sprinkled with garlic powder, dried thyme and rosemary, salt and pepper. Will be doing these in a foil packet.

Bell peppers and a few scallions with a little oil, salt and pepper.

Sides on first. Potatoes about 30 minutes and veggies about 15.

Steaks right around 8 minutes.

Peppers softened up nicely.

That looks great all around, Cliff! You never disappoint!

The only thing about this post that I don't like is the fact that it reminds me that CostCo now takes the rib caps off all their prime ribeyes so they can sell them separately (at a higher $/lb) as rib cap steaks. That's my favorite part of the ribeye! Of course, the solution to this (first world) problem is to just buy the whole roast and cut my own.....which I do! :)
