Ham Loaf with Golden Sauce

DH made this Monday, ground the ham. He made 1/2 the meatloaf, but full recipe of sauce. Good thing he did, to me that was the best part. lol I want to try and bake Spam with the leftover sauce. Don't knock it, it sounds good to me. lol

Ham Loaf with Golden Sauce

1 lb. ground fully cooked ham
1 lb. ground pork
2 cups soft bread crumbs
1/3 cup pineapple juice
2 eggs, lightly beaten
1/2 cup chopped onion
1/4 cup packed brown sugar
2 TB. chopped fresh parsley
2 TB cider vinegar
1/4 tsp. ground cloves

SAUCE:

2 cups pineapple juice
3 TB. cornstarch
1 to 2 TB. brown sugar
2 tsp. lemon juice
1/4 to 1/2 tsp. ground ginger

In a large bowl, combine first 10 ingredients. Pack into a 9 x 5 x 3" loaf pan. Bake at 350 for 1 1/2 hrs. Meanwhile, combine all sauce ingredients in a saucepan. Slowly bring to a boil, stirring constantly until thickened and translucent. Allow to stand for 5 minutes. Remove loaf from pan and serve sauce over it. Yield 6 - 8 servings
