It sure took a long time to get my very own Vortex after seeing so many here sing it praises.

I've only cooked one batch, but I don't think I've ever had the skin on chicken wings render so completely - this stuff was paper thin & crispy/tender, what I imagine those scraping at the underside of the skin from their competition thighs are trying to achieve.

My grill seemed to be running at 350F according to the vent (bent) thermometer, I didn't run a meat/pit therm, but maybe next time I will. I cooked these for ~33 minutes.

The sauce was 1/4 cup soy vey veri teriyaki, 1/2t garlic, 1/2t black pepper, some habanero hot sauce, ~1.5t rice wine vinegar, ~1/2t ginger powder..... brought to a light simmer, added ~1/2t corn starch, simmered for barely a min & then off the heat until tossing the wings in it.

went a little heavy on the smoke wood - I thought I might be making a mistake but I really liked the flavor (apple):

I used the real deal Vortex the other day for the first time and found the same results you did.

Yep, it took me one load of wings to be a convert! I thought it was a big load of Hooey! I admit I was wrong, I’m still learning the ins and outs but, if I never use it for anything other than wings, I think it was money well spent!
 
Welcome to the vortex club Clint. I use mine (dog bowl and real deal) for wings and kettle fried thighs. That's the only way I will do them now.

Outstanding Clint, the vortex is the only way to cook chicken. Yours look delicious.
 
I want to try thighs or legs with my Vortex.

Since I only cook for my wife and I , we have plenty of room between the wings and I like to mix some ABT's in between.

The Vortex is no joke. I too am a firm believer in it now too. I thought I knew how to grill wings until I owned a Vortex. Hands down one of my favorite purchases of last year.
 
Amongst my favorite things to grill are chicken parts (wings, thighs, and legs) along with ABT's. I do them all on my Performers with the Vortex (and also my Jumbo Joe with the doggy bowl). I like the Vortex so much that I bought em for my kids as a surprise gift. My son-in-law is a serious griller and smoker and he told me he was about to quit trying to grill chicken parts until I got the Vortex for him. Now, chicken parts are some of my grand kids favorite foods!

One of the best grilling tools, EVER!!
