Did a small part of a pork butt ( about 2 lbs) from a butt I got on sale for $.99/lb at Vons and portioned into pork steaks, country style ribs (for bbqing and also for pork ragú), and the roast. Bone for stock and fat for sausage is in upper left of the picture.
Salted overnight then rubbed with the average rub from this post https://tvwbb.com/showthread.php?71752-One-rub-to-rule-them-all-(Average-Rub)
Took 9 hrs from lighting charcoal to finished
Overall it was very good. I liked the rub, but I will probably cut back on the sugar next time I make it. The sammich was pork, a little Sweet Baby Ray's sauce, and coleslaw. It took longer than I thought it would, being so small, but it was fun and turned out good.
