Chicken Salad

marinated half of the boneless/skinless thighs in Wishbone Italian dressing, the other half was hit with some taco seasoning.

Cooked over Stubbs natural briquettes with a leftover stick of apple wood.

....jalapeno ranch was the dressing.
 
Nice looking salad Clint. When we make thighs we always do four, we use two for the dinner and put two in the fridge for a salad latter in the week.
 
That salad looks fantastic. Like Rich said we do that a lot with left over chicken.
 
I'll have to try the Italian dressing marinade.

You won't regret it! It's the first marinade I really remember using / friends using, plus it was one of the Weber founders favorites even though some advise against it.

I'm not sure I'd compare it to the Roadside marinade but it's pretty good. The salad dressing (Wishbone Italian) seems to be decently healthy too; I don't use it on salads very often but I seem to keep 2-3 bottles on hand.
