First time I made it with corned beef but it came out very good, for me, the black pepper used was too much, I used Meatheads pastrami rub,
Next one will be half the BP, and more coriander.
I did a very lazy man's pastrami... found the CB @ the grocer for $3.49/lb, I ran it at 140F in the SV, original spices only (rinsed the nasty original brine off, rubbed with the included spices, then into the vac bag). After ~19 hrs in the bath I put it on the gasser with mesquite chips in a smoke tube for I don't know how long......just to get some color. I used mesquite chips & think I added black pepper but I didn't do much of a rub. Also didn't soak either. There was a ton of juice/fats that rendered in the SV, it wasn't too salty. I ate it with some seeded rye / sourdough.
