Hello All!
This year I did 2 - 8 lb Turkey Breasts on my Performer with Rotisserie ring for added height. Cooked them @ 350, pulled at IT of 165, and cook took about 2.25 hrs.
I cooked 2 this year as we ate one for dinner and there were no leftovers. The 2nd one will be for sandwiches and Turkey and Sausage Gumbo!

Again, that looks great!
My turkey was beautiful but, pretty un exciting. Brine didn’t turn out quite like I’d hoped. Next year I might just need to try your double breast technique! I’m in the distinct minority with regard to dark meat.
Two breasts will be the ticket!
 
I love doing just the breast, but there are dark-meat lovers around, so we go full bird for Thanksgiving (11.5lbs this year). Did it indirect on a kettle with pecan. Onion, celery, carrot and about a quart of chicken stock in the pan -- the celery and carrots make an ersatz rack. Started it breast down for a little over an hour, then flipped it. Painted it with melted butter at the start and at the flip. It finished in about 2-1/2 hours at around 300. Result was very good.
