    I've never seen that before but I'll throw out a guess. Looks like where it is at would put the probe about grate level. Maybe it's a method to mesure temperature where the food is. I have no idea, just throwing something out there.

    Yep. Grate temp. Much more accurate than dome temp, at least right above where the stem is.

    Does the term “Rectal thermometer” cross anyone else’s mind?

    Along with “Just because you can, doesn’t mean you should.” Jason might have the right concept but, then again so might Bob, .22 or maybe .17 (might be a better probe diameter)

    He must have used his grill as a low and slow smoker. I think searing at volcano hot temps would fry that poor thing.
