    What's your turkey leftover plan?

    I like the leftovers as much as the original meal! Here's my game plan. Not necessarily in order.

    Turkey and dumplings.

    Turkey gumbo.

    Turkey pot pie.

    Turkey enchiladas.

    Turkey tamales.

    I usually do 2-3 turkeys every year. One in the indoor oven ( stuffed ) and another on the WSM or OTG, and one more in the Charbroil infrared turkey fryer.
    First thing I do after the crowd relaxes, is to get those carcasses going in water to make some stock.
    I vac seal any leftover smoked wings,legs or thighs cause that's a nice addition later in the year to a pot of bean's and rice or as you pointed out gumbo.

    I plan to not have any if I do things right! That is yet to happen!
    Other than that, Turkey casserole is often on the menu for post crazyday shopping! Or Saturday’s dinner. Turkey shepherds pie is fairly high on my list if I have done enough mashed potatoes!
    Creamed pearl onions will be in short supply as leftovers but, you never know.

    We usually fry one and smoke one, just to ensure that we have leftovers!

    We usually Grill 2 Turkey breasts, 1 for the main dinner and 1 for Turkey and Sausage Gumbo the next day!

    I take the leftover turkey and cut it into 3/4 inch cubes and freeze in plastic bags. I put 2 cups of turkey in freezer bags and later use it for pot pies or add to gravy and serve over toast for breakfast.

    Also, I "char" the carcass in the oven before making stock - makes it a lot more flavorful.

    Turkey hash, pot pie, enchiladas, soup. Freeze the wings and drums for future use.
