Taco Casserole Night

We decided on a taco casserole dinner since its still 102* outside. Rich made his home made refried beans. Then I got everything in to the CIS for the sauce. After that it simmered for 25 minutes. I did 3 layers with corn tortillas, refried beans, sauce and Mexican cheese.
On to the E320 at 350* for 30 minutes covered and then uncovered for 10 minutes to brown the cheese. Let rest for 5 minutes then plated, it was delicious and simple.

That's awesome, I remember an Enchilada casserole recipe shared here many years back that I did quite frequently and this will definitely make it into my repertoire now!
 
Yep... my kinda food. That casserole is almost too pretty to eat.

Will try to replicate for desert season camping.
