Jamaican Jerk Chicken on the WSM: April 28, 2018.

I had only made this in the oven before.

I wanted to try it on the WSM.

I used the middle rack. I set the Flame Boss temperature to 400 degrees, and it cooked for 37 minutes to reach 165 degrees. Which is probably about the same time it would have taken in the oven.

It came out great, just like in the past.

Yum! You can't beat jerk cooked over charcoal.
Just breasts ? I like to mix in more legs & thighs meself.:)

Good idea. I'll try a mix, I haven't done a mix of parts in a long time. It's usually only one thing (unless I'm doing a whole chicken).

The legs and thighs would probably cook faster, right?
 
Having marinaded shrimp at a recent family BBQ has reminded me that I need to try shrimp too, on high heat on the WSM.

I guess I'd put it in a small square baking dish that I have?

Or would I put the shrimp on aluminum foil, which would go on the cooking rack?
 
Having never bought shrimp before, I didn't know there were so many different sizes.

I looked in the fresh and frozen section, and saw there was also jumbo shrimp.

I think if I get those, they can go directly on the grill.
