Cured/Smoked Sirloin Steak and Avocado/Tomato Salad

Had a lonely Prime sirloin steak from Costco that I decided to cure and smoke.
Four days in the fridge using Morton's Tender Quick.
The basket of old coals you see is not lit, I had a thrown together snake on the other side with pecan wood chips.



At the last minute I decided to cover it with garlic powder.



Done with internal at 165.





On a hot dog bun with Gulden's spicy mustard, and Gouda cheese.
The salad was avocado, tomato, and onion with a dressing of garlic olive oil, balsamic vinegar, and lemon juice.



Good stuff!

Looks amazing Bob. I was trying to figure out what you were doing when I read steak and Tender Quick and snake. But I can see now that was a great idea.
 
You are the man when it comes to cured meats. Really like that sandwich - both of them. And the salad.
