Dry Aged Steak in 48 hours

Wonder if that's the same stuff that turns the bologna green in the back of the fridge after six months :p

It's about $9 for a bag of the rice on Amazon.
I've never had a dry aged steak either. I'm with Dan, a NY strip should be a great test.
Another article about the process:
https://www.bonappetit.com/test-kitchen/how-to/article/dry-age-shortcut-koji

"The meat has a very distinct flavor and picks up a slight miso sweetness. That sweetness is the biggest difference between the real dry-aged meat versus the koji hack, and that’s likely what causes the meat to brown or caramelize faster. The koji steak is also a little less tender than the 45-day one, but I’m not complaining."

Dry Aged Steak

Hmm... I don't think I've ever even had real dry aged beef to compare. Cool idea though.

I can now get prime beef easier than dry aged ... Whole Foods has dry aged from time to time. Prime is much more important to me than dry aged. Serious Eats has many entries on dry aging at home. Try them first.

So, you will do a big “ Reveal” tomorrow?
Oops, forgot, waiting on treated rice delivery.
I mist remember...
“Patience grasshopper, all will be revealed in its own time.”
