1 cup Milk
1 cup Flour
4 Eggs
1 tsp Sugar
1 tsp quality Mexican Vanilla
1/2 tsp Salt
1/2 tsp Baking Powder (make sure it's fresh or no rise)
1/4 tsp. Ground Cinnamon

Pre-heat a cast iron skillet in the oven at 425*. Put all the ingredients into a blender and spin for a minute or two. Melt 1/4 cube butter in the skillet and pour in the good stuff. Turn the oven down to 375* and bake for about 20 minutes. It'll look like it's about to expand and fall right out of the skillet; that's normal.

The recipe is scalable. You can make 1/2 or X2. However, if you are going bigger than the posted recipe - you will need a larger skillet or Dutch oven. I use a 10 1/2" cast iron skillet (measured across the top) or a 4 or 5 quart Dutch oven for the "full" recipe.
