Made the Chili Colorado last night and the Mexican Rice today. I wasn't as impressed with the chili co last night when I just ate it plain out of a bowl, but it was top notch when paired with rice as a proper meal.

I went with a ~6.3# bone-in pork shoulder instead of a 4# beef roast mainly due to price, and sizes available of the roasts - no regrets. I 1.5x'd the recipe
