Congrats and happy belated birthday! Turkey. Dry brine with kosher salt. Inject with butter and your choice of ingredients. Don't need any wood smoke the dripping juices will provide you with plenty.

I like the 12-14 lb. hens they are the most tender to begin with.

One of the best turkeys I have eaten. ~4 hours at 300° IIRC.
