Redneck Egg Rolls

I made some Redneck Egg rolls last weekend for a neighborhood competition. They took first place!
I was able to use a cast iron pan over coals on my kettle with the the corn oil maintained at 350 degrees.

I used Wei-Chuan Spring Roll Shells, Corn oil to fry in,
Filling was: pulled pork, Crumbled bacon, coleslaw (light on sauce), grated pepper jack cheese and a small amount of BBQ sauce.
Mix all together
Put some on the spring roll shell and roll up tight as can be, final corner eggwash and finish rolling over.
Fry at 350 for 8 minutes, till golden brown.

Corn oil works better than other oils for browning these shells

Hope you enjoy as much as the judges
