Smoked COrned Beef Help!

Good morning,

Last night I started smoking a corned beef, 3 lbs, soaked overnight. I setup my DigiQ and tried Weber briquettes, had it going solid at 225before going to bed around 12:30. Woke up this morning at 7:30 to the smoker at 120 and the temp probe reading low.

I wrapped in foil and put in a 225 oven, but am wondering if it’s going to dry out now. Any advice on next steps?
 
Morning. I doubt it. I doesn't appear that it got hot enough to dry out.

Others may chime in with their concerns about food poisoning though (but I won't).
 
As long as you get it up to the ideal temperature, (I pulled mine off at about 195) you should not have any bacterial issues.
Foil will help in keeping it from drying out too. Don’t worry about it, you will be fine.
