Yeah, it's been a while since I've posted. Work has been terrible, and the weather hasn't been cooperating on the weekends. That, and I keep forgetting to bring my phone out with me to the grill!
So, first of all is some bacon and short ribs I put on in mid-January. The bacon was cured using SR's recipe and the short ribs were seasoned with some espresso rub my nephew got me for Christmas. Both onto the kettle via the snake method with some hickory chips sprinkled over. The kettle settled in at 225*, and the bacon took about 3 hours. the ribs went longer for about 5 hours. Soooo freaking good!

And, as usual, no plated pics!
Next, I did some fresh ground beef for sliders for the Super Bowl. I did a huge batch of ground beef! About twice what I normally do. But I made sliders for the game, burgers for the freezer and meatballs!

Same deal, yada yada, no plated pics. But the were sure tasty!
No grills were involved in this meal, but it's my favorite to cook for sweet Pammi Sue, scallops, mushroom risotto and some green beans for me!
