I didn't have today off, but I took off from work 2.5 hours early because of this:

Had to get the grill ready: (((Ran out of gas during the warmup - had to trudge through knee deep snow in shoes/shorts to get another tank))))

2.5 - 3 minutes per side. I was going to go twice that but it looked good to me:

I used hickory chips in the Mo's smokin pouch, I wanted mesquite but didn't see that right away

I saved 2 bags of Chile Colorado from the last time I made it - great stuff - I had it for lunch too....just rice/cheese/co sauce.

And I was ****ed because it was windy! You’re a trooper Clint. Wonderful looking meal! BTW.. how’d you find a beer with your picture on it?
 
That is some serious good eats, and another reason Utah is not likely to be my retirement state, LOL
Although the beer in the snow does has a nice appeal to it :)
 
Almost made this exact dish last night except was w/tortillas for wrapping - hope it was delicious, it certainly looks like it!
 
That is pure dedication, if I looked out and saw that snow on those grills I'd be heating the oven for a frozen pizza. Looks good though Clint.
