Pinquito Beans & a Tri-Tip Sandwich.

Had a fair amount of leftover Tri-Tip from a recent cook & wanted an EZ dinner for the wife & I.
Decided Pinquito Beans would be a good accompaniment to a Tri-Tip Sandwich.

Fried a half a pound of diced bacon.

Removed the bacon & sauteed the chopped onion & poblanos. Then a couple cloves of minced garlic.

Added the drained & rinsed beans. Got them nice & warm.

The bacon bits were returned to the skillet. Finally a big handful of chopped cilantro. Seasoned with K salt & ground black pepper.

Some knob onions I found hiding in the veggy drawer.

Toasted a couple of hoagie rolls.

Gently warmed some reserved au jus & tri-tip slices.

I knew there would be some great looking follow up cooks to that monster Tri Tip you did a few days ago. You did not disappoint! Delicious looking combo Robert!
 
Just like Cliff said, there had to be some awesome left over tri tip dinners and you did great with this one.
