Cold smoked cheese log

I did it - made one yesterday too.

This morning while getting ready to leave I got some cream cheese & 1 cup of walnuts on the smoker (grill with smoke tube).

this is 3 hours later - I turned the small piece over to show the contrast:

I let the cream cheese & nuts go another hour (probably 4.5 hours total), cooked & chopped the bacon, then mixed it up with some shredded Mexican blend cheese (lightly flavored, tilamook iirc, with white & cheddar cheeses) and some shredded mozzarella cheese. Mixed it up with a bunch of chopped green onion, 1tbsp worchestershire, I pulled off a chunk for the neighbor, & then I added hot sauce to the rest. I crushed the nuts & rolled the ball & then the log into it............. very tasty!

Yesterday the air was so dirty & it was snowing lightly (cleaned the air for today), so I used smoked salt, 1/2# shrimp I boiled in tony cachere's & did pretty similar to todays. The salt on the shrimp log from yesterday (not pictured) was a bit much.
 
Nice job Clint. I did four blocks of cheddar and some kosher salt a couple of weeks ago. We love smoked cheese but I have never tried cream cheese - going to have to give that a whirl...
