10 hours later, here is the result. Used Pecan and bourbon soaked oak for the smoke. Everything went well. Maintained temps between 225-250 the entire day. Snuck slightly over 250 a couple times but I caught it quickly.

I was just thrilled to be able to keep the temp in that range for 10 hours! I have done chicken, beef ribs and turkey breast recently and had my temps all over the place! Too high. Too low. etc. This one really went well on Saturday. Very happy with every aspect. The only negative was we should've made homemade coleslaw while the pork for smoking! We forgot!
