If using a Vortex, why flip ?

And ohh btw, great ........... looking drummie, I bet it tastes better than it looks.

Ben;
Great lookin' wing!

Regarding flipping:
When I first got my Vortex, it didn't seem to require flipping for evenly cooked chicken parts. However, after using it for a while, I discovered that running the Performer wide open, and flipping at 20 minutes, did a slightly better job. Now, I ALWAYS flip at 20 minutes, then pull when they are done (more time for bigger parts aka thighs) and somewhat less time for wing parts.

Keep on smokin',

Ben, beautiful photo of some gorgeous wings. Those wouldn't last long around here, either, and I'd be tempted not to share!!! Fantastic work!

I feel it cooks the wings more evenly and keeps the color more consistent. Thanks for all the kind words everyone.

Love wings from my Vortex and I can do some pretty decent camera work too, but I've never taken a food photo prettier than that one!!!!
