I am going to smoke half and freeze half, with not smoke... I got my new stuffer in and away we went... My 7 year old got a good arm workout in.. I gathered about 2 lbs and will make in patties..

I am going to cold smoke for 2 hrs tomorrow and then heat til 153.. I have them sitting in garage.. Cool around 40, but with the curing agent mixed in last night, I think I should be fine..

P.S. I suck at stuffing...
 
Looks really good. What does the seasoning include for a Cajun style ? Black, white, red pepper ? Dried thyme ?

Only thing I have to question, is the casing, it was a Hog Casing.. Natural, but had extra snap to it... Last time I don't recall that being like that
Maybe it was from an older animal and was a little thicker? Regardless, the brats turned out really nice!
