Has anyone cut the 1/8 male plug off the end of of a ThermoWorks Thermister Pro Series meat probe.

I need to thread it thru a small hole and the connect it to a screw post
 
Shouldn't be an issue, and since they have no polarity, I don't think it matters what wire goes to which terminal.
 
Cutting the plug off and resoldering the wires may add a resistance to the probe and will change it's temperature. By how much, not sure. Probably not much though, just make sure it's a good solder connection.
 
The pig tail, after I cut the plug off, will be connected to a screw connection block.

This is to allow meat probes to be used on my rotisserie smoker. I have a 12 pair slip ring that allows the leads to rotate.
 
Here is another question...

Is the a limiting factor if the temp probes have longer leads let's 6ft. ?
 
The resistance at 200F is something around 7300 ohms which is still pretty high compared to contact resistance. Room temp is like 100kohm. I think the reason Thermoworks suggests to only use one extender is because the longer the wire the more noise it is going to pick up because they aren't shielded
