Ribs over two days

I've got some baby back ribs that I want to smoke. Problem is, both today and tomorrow are busy and we're on a schedule. So, using the 2-2-1 method, I'm thinking about cooking the ribs two hours today on smoke and two hours in foil. Then, tomorrow, just before dinner, cook the final hour on the grill with a little sauce.Has anyone ever done this? Thoughts? Appreciate the input.

Never done it,but I would think bringing the ribs to "done" (140F) would be "safe". Reheating (finishing the cook) in the oven should be the way to go.

When I tailgate for football games, I always smoke them the day/night before. I go at 275 for about 2.5 hours, then wrap in foil with some butter, Brown sugar, and honey. Then I put them on ice and cool them down. Game day I’ll get them going in the foil on the grill indirect for about 45-hour, unwrap and then indirect until firm up. Come out great every time.
