Has anybody tried both Butcher paper and foil while smoking ribs to compare the results?? Interested to see how things turned out. I imagine the the Butcher Paper kept the bark better but retaining the moisture might not be as easy.

Never tried paper on ribs, but you can always place it in a pan after wrapping it to collect/save any juices.

When I foil ribs I drain the juices off, place the container in the freezer to solidify the fat. After I remove the fat I heat it up and strain it though a nylon net, drain back into the pot and heat (to reduce volume) then use it as a mop sauce if anyone wants it.
