Separate cooks but posting together. 5lb pork but, with Gator Hammock 'Cooter Rubb'. 9hrs, with a pretty long stall. Realized (after this cook) I have not been prepping my WSM properly- using minion method- I have not had all vents to 100% to reach 225. I was leaving then at 23-30%. Wasn't getting complete burn of the fuel, and had to add some fresh KBB at the very end of the stall. Still turned out fantastic and had pulled pork sammiches for days

On the chicken cook I lit the WSM at 100%, then brought it down. The temp ended up dropping below 200 towards the very end so i carefully blew in the vents. The chicken all temp'd out just fine, and was absolutely delicious. I used Miller Lites, rubbed with Gator Hammock's 'Gator Sprinkle' and sprayed with apple juice after the 2nd and 3rd hr. There was still a good amount of fuel left as well, and I only filled the ring halfway for the minion method. First time doing beer can chickens on the WSM and it came out pretty damn good i must say.

Looks great. Birds remind me a bit of two sumo wrestlers about to collide. :D
