Skirt to break in the new grill

I was antsy to fire up my new (to me) grill a couple of nights ago, so I marinated some skirt steak in the coffee/vinegar/mustard marinade that I posted a little while back, and got at it.

New chimney (burnt the old on out), new stainless charcoal holders, new (to me) grill:

Used the gourmet grates with the cast iron insert and a HOT fire....about 90 seconds per side:

Didn't get any plated shots, as it disappeared as fast as I could slice it! The marinade delivered the flavor I wanted, had a good pink center, and tasted great plated up with some white rice and doctored canned black beans. Good stuff!

Tonight, I'm spinning a bone-in pork loin.....pics at 11! ;)

Looks good! Gotta love that sear grate. A nice cook for a nice, new toy.

Looks really good. Did that BBQ come with that grate?

That would have been too much to ask, Chuck. It came with the standard, rusty, neglected grate.... :) I have had the gourmet grates and insert for a couple of years.

I know how delicious those were, first hand. I'm keeping that marinade in my favorites file. Thanks again for sharing that Rich. Fantastic looking cook.
