More Chicken Mole!

I went to visit my dad & brother Saturday evening / Sunday until 5pm, and we made some chicken mole. (Chuck bought a case and sent me half after I joked about it :) )

After I made it last time, my new worker (hope he works out but.............) brought some from home his GF made - it was darn good, & they used drumsticks, but this is right there with it.

This is close to 4# bonless/skinless thighs on the weber Q200 I left down there for them (along with 3 Anaheim & ~5 Serrano peppers)

Grilled the chicken for ~30 minutes + or -, then into the sauce just plain this time (no onions or peppers in it), added some of my favorite habanero sauce (only thing added to it) - simmered it for maybe 10-15 minutes with the chicken which we broke up:

smashed some black beans, added a little garlic salt and hot sauce....half the can liquid, & a little water, & smashed with a potato masher:

The old man didn't understand why I was taking pictures of the food: "everybody's taking pictures of their food, why?" and they were both excited for me to take our pic :)

They've lived in AK, NY, FL, MO........since 2000, it's nice to have them in driving range again, though not as nice as the same city....it's a 290 mile drive each way.

Man I can't wait to make my Mole. You've set the bar high, hope I can at least get an attaboy - that's one bad motoscooter my friend
 
That looks really good Clint. I've never made mole, that's gonna have to change.
 
Man can't have enough chicken mole. Looks great.

I like mashing up saltines & adding them to the pot.

There's nothing to it! I'd call it a simple flavor but that doesn't do it justice - subtle might be a better description but maybe not.

I didn't even season the chicken thighs - just rubbed with EVOO & onto the grill. The sauce was just the Dona Maria mole sauce (3 small boxes, 9.5oz each). We grilled the chicken, the little brother broke it up (don't have to, u can use bone-in skin-on chicken pieces in it if you like) and stirred it. The rice was plain, the beans were pretty plain too (little hot sauce & garlic salt in the beans, plain-old brown rice I believe (my lil bro made that).

Try it plain first. This recipe sounds like this one tastes - maybe I'll try homemade sometime.... I have a pile of Mexican cookbooks so no excuses
