Wood chips instead of chunks


 
I have several bags of apple and hickory chips. I'll be doing a pork butt that requires a long time - probably around 9 hours. I hate to buy chunks if I can use the chips. I thought about mixing the chips as evenly as I can in with the unlit briquettes. Any opinions?
 
Yea, just layer the chips in like making a lasagna.:)
I did it before and it works alright.

Yep, use what you have. Buy chunks next time don't worry, there really isn't any smoked butt that's bad, some are just better.
 
No water. Waste of time. Boats are made of wood. They don't absorb water. Neither will wood chips.
 
You just need the "smoke" for the first several hours of the cook. Use them up & get you some chunks for next time.
 
You might need more chips than you think, though. Chips take up a lot of space. Use a generous amount.
 
I always use chunks but I was given a few bags of chips so I wrap a few handful in foil, poke holes on the top foil and place on top of the coals. works great.
