Beef cubed and seasoned with salt, pepper and oil, with a couple of rosemary sprigs and some chopped bacon thrown in for good measure. The bowl sat in the fridge overnight.

I like my ground beef fairly coarse so just one pass through the grinder.

I was really happy with how these turned out. The meat didn't get dry even after cooking it enough to melt the cheese inside, and they had good flavor.

Thanks, everybody! Jucy Lucys do take a bit more work than a regular burger but the end results are usually worth it.

Steve, you won't regret buying that grinder!
