Using butcher paper for brisket

I bought a HUGE roll of white butcher paper from a food service store.
People say in different recipes to use pink butcher paper. I know famous barbecue joints use pink butcher paper but is there really a difference?
The white butcher paper is obviously just bleached.
Has anybody found there to be a difference in butcher paper.?
 
I've got pink butcher paper. I haven't tried the white. My thinking is that it will work fine. I think Louie Mueller Barbecue uses white, but they may only rest briskets in butcher paper.
