    Smoke Day 13 in Raymond, Wisconsin

    Smoke Day 13 started with preparations on Thursday...



    by making some Wicker's BBQ sauce...







    set that aside for chicken soon to bathe in it until Saturday
    Then Friday night, got the salt/pepper seasoning out to decorate the 11 pound brisket



    then set-up the 22" WSM for an early morning smoke.



    Smoke Day actually started about 3:35AM Saturday when I fired up the WSM



    placed the brisket on, waited about another 30 minutes for the WSM to settle in to a comfortable temp...
    I then went back to bed.





    later Saturday morning, I seasoned the ribs...

    ...set-up the Ranch for smoking the ribs...



    the brisket was wrapped in butcher paper once it reached 165...





    ...and placed back on the WSM.



    the plan was to serve BBQ at 4PM, so I wanted the ribs on by 11AM.... did that.



    Guests started dropping in at 3PM... just about the time the brisket reached my desired temp of 205.
    Chickens went on two Weber kettles...marinated in the homemade Wicker's then lightly seasoned with Lawry's

    ribs were cut, brisket was sliced...











    Unfortunately, no photos of plated chow...
    folks relaxed after dinner and before the music started...







    It was another successful Smoke Day celebration in our part of this world...

    Side Notes:
    Brisket on at 4AM, Kingsford Original for fuel, hickory wood for smoke
    Consistent temp of 250F registered on ThermoWorks SMOKE
    Brisket reached 165F approximately 10AM
    Pink butcher paper used to wrap brisket at 165F.
    Brisket reached desired internal temp of 205F at 3PM

    You went all out & it shows. Love the cooks, the food & the pix. Especially the brisket & ribs.

    Smoke Day doesn't get any better than that!
