the plan was to serve BBQ at 4PM, so I wanted the ribs on by 11AM.... did that.

Guests started dropping in at 3PM... just about the time the brisket reached my desired temp of 205º.
Chickens went on two Weber kettles...marinated in the homemade Wicker's then lightly seasoned with Lawry's
