2017 Smoke Day in southwest Colorado

Got my smoke going. Started off with some Stubbs briquetes topped off with evergreen oak lump.
2 hickory mini splints & 2 fist sized cherry chunks. Guinness is in the water pan.

Brisket seasoned overnight with our smoke ring brisket rub.

And its on.

Also had some of Bobs bacon ready to go. Threw it into the Good One smoker

Bacon is on

Used sugar Maple & Hickory mini splints for heat. Will add more as needed. smoking in the 150-160 range.
Bobs bacon is gonna rock the rockies.

My daughter, her hubby, oldest son and a grandson are camping near Del Norte, CO this weekend, maybe I'll send them your way for dinner. :)
 
Nice to hear from you Bob. And if they show up we will surely feed them. Got plenty to share.
They are just on the other side of the pass from us.
 
Looks great Russ, we had some of Bob's bacon this morning and Barb is using some for her poppers this afternoon.
 
Hours later we are @ *175. Gonna pull it off & wrap in paper.

Ready to wrap in paper, going to do a spearment. Going to wrap it in foil after the paper.

Brisket is finally done. Took it off when it reached 201*. Let it rest for a while before we sliced it.


The paper was soaked.

No plated pics of the sammies. The meat was really tender & had lots of flavor. Froze lots of it for later.
