So my electronics acumen isn't where it should be. Could someone explain what the MOSFET and the pull-up resistor on the servo signal wire is do?
 
It's just a simple servo booster, it adds stability to the servo operation and enables it to be driven over longer cable runs.
 
To clarify, it just converts the 3.3V servo pulse output to 5V pulses. Most servos do just fine with their control pulses being 3.3V, but we boost it to 5V because some of the cheap servos we use seem to provide more torque / less chatter when driven with 5V instead of 3.3V directly from the ATmega. For shorter runs this usually isn't a problem.
